Finger limes sometimes called citrus caviar or caviar limes, are small and oblong with a juicy interior filled with tiny, pearl-like vesicles that burst with flavor when bitten into. Those pearls are the whole party. They have a distinctly fresh, vibrant, citrusy taste that balances bright acidity with mild sweetness — tart and sharp when less ripe, sweeter and more rounded when fully ripe. It’s somewhere between a lime, grapefruit & a tiny edible miracle.

Originally from the subtropical regions of Australia, finger limes’ little pearls resemble fish eggs make everything they touch feel a little fancier. Chefs have been obsessed with them for years. Now you can just... have them. In your fridge. On a Tuesday.

Finger limes are rich in vitamin C, folic acid, and potassium, and are low in calories — so you can feel righteous while also garnishing your cocktails & tacos with something that looks like it belongs at a Michelin-starred restaurant. Colors and varieties may vary — skin can range from deep green to reddish-purple, with pearls from pale white to vivid pink inside. Every one is a little surprise.

HOW TO USE
Slice in half lengthwise and squeeze or scoop out the pearls. Layer them over tacos, grain bowls, and green salads; sprinkle over sliced avocado with sea salt; or use them to brighten seafood like oysters, seared scallops, sushi, and ceviche. They also work beautifully in dressings, aioli, marmalades, and as a floating garnish on cocktails. Basically: if a dish needs a little zing and a serious glow-up, this is your fruit.
